I wanted a really easy, but super tasty snack one afternoon and these Ritz Cracker Turtles came to mind–so easy and fast.
My snack was in hand and ready to be devoured in less than ten minutes.
Happy was my word of the day.
Ritz Cracker Turtles
Just one of those days here in Texas where the weather can’t decide if it’s going to be hot or cold.
Today was hot.
So I headed out to the poolside with my Ritz Cracker Turtles for a fun afternoon snack with a friend.
To say it was a little slice of my very own heaven would be an understatement.
When she called and said she’d be coming over around 4, I really thought “well, dang, I’ll have to make dinner.”
But then, inspiration struck.
Garageband 4.1 2 for mac iso. Why not just an easy snack–and then she’ll leave before dinner and I can still do whatever for the family.

Just like these Ritz Cracker Turtles–so easy and FAST.
I just popped a Rollo candy on a Ritz cracker, then set them in the oven for a couple minutes.
Not too long–it’s not like I wanted a melty mess.
Just long enough to get the chocolate warm and gooey.
As soon as I reached that magic melty point, I took ’em out and tossed another cracker on top.
See, this is where it gets tricky.
I wanted to do all this on the baking sheet, to keep the mess down, but the baking sheet was hot.
So I had to keep my fingertips up–and I may have warmed a couple of them before I realized it. Don’t be like me–keep those fingertips well and away from the baking pan.
Once they were all covered, I was tempted to just eat them like that.
I mean, what could be more perfect than a caramel-and-chocolate-stuffed cracker?
Oh, well, a chocolate-topped caramel-and-chocolate-stuffed cracker of course!

Just a little more chocolate–that’s all. Not a lot.
Wouldn’t want to go overboard, now would we?!
Oh, heck, to be kind of overboard, it made sense to just toss some pecans on top after warming the crackers juuuuust a little to melt that chocolate on top.
Just a little.
Those pecans are what really set me over the edge.
I am afraid to admit that, if my friend had not been on her way to visit with me, I may have finished this whole batch all on my own, they were so good.
I swear that the combination of chocolate and caramel gets me every time.

It’s like a magical formula for making me eat a snack. For real.
Also, I love easy recipes. Should the day ever come where there’s a law made that people can’t make snacks that take less than 10 mintues, I’m out.

Ingredients
40 Ritz crackers
20 Rolos
1/2 cup chocolate chips
1/2 cup pecans
Instructions
Preheat oven to 300 degrees.
Place 20 Ritz crackers on a baking sheet with a Rolo on each.
Bake for 3 minutes.
When removed from the oven, immediately push another cracker onto
each Rolo, creating a little sandwich.
Place about 8 chocolate chips on each sandwich.
Bake for 1 minute or until chocolate chips are soft.
